While my grilling exploits rarely exceed the pedestrian (burgers, brats, veggies), others get enviably creative with outdoor cooking recipes.
I’d love to hear what people have grilled themselves or eaten off the grill that’s a bit different. Or even a new twist on a BBQ classic.
Next weekend, April 10-11, we’re having our 4th annual BBQ Expo with grilling demos at all of our stores. From 10-4 Saturday and noon to 4 Sunday, we’ll fire up the latest gas, charcoal and smoker grills with everything from smoked sirloins to pizzas to even pineapple upside down cake. I’ve done pizza before but my favorite has always been cooking sliced potatoes with onions and green peppers. Slice, wrap in tin foil with butter and garlic and let it sit for a good 20-30 mins. Great with burgers!

That does sound good. I’m intrigued by the whole “pizza-on-the-grill” thing. Do you grill all the toppings and then put them on the dough and cook them?

One of my favorite things to do is make grilled salads. Either using halved romain hearts and making grilled caesar salad, or grilling halved cabbage before chopping it up to make grilled coalslaw.
A lot of the popular midwestern “salad” sides can be make grilled. Like by grilling boiled potatoes and then making the grilled potatoes into potato salad.

During full-on Grill Season, my wife and I like to take a break now and then from the usual mouthwatering, and often meaty, fair. We grill burritos.
Whatever we’re feeling like gets rolled into a couple burrito shells and tossed on the grill. A layer of tin foil will keep the shells soft, but if you’re like me, put it directly on the grill – it gives the tortilla shell a fantastic crunchiness.
And just like anything cooked this way, the fact that you’re making it on your grill, outdoors, makes it taste that much better.

Just about anything you could imagine in a burrito!
Beans (black or refried), chicken or beef (usually leftover from previous grillouts), Peppers, Onions, Cheese, red pepper flakes, Cilantro, Culantro, salsa… Those are the basics at least.
